Chocolate raw materials (cocoa powder, cocoa butter, sugar powder, milk powder, etc.) into the

Cocoa or powdered sugar, which is ground only for the first time, has a large particle size and a rough feeling when it enters the mouth. The particle size must be further reduced by conching. When most of the plasmids are smaller than 25 microns or between 18 and 23 microns, the chocolate will enter the mouth without granulation. This range is the requirement for conching.
